Rossana’s passion for Mexico’s rich cultural and gastronomic heritage began at a young age, and it was after her family moved to Vancouver in the early 90’s that she soon realized what her mission in life is: to share with the world what authentic Mexican food is truly all about.   For nearly six years she was at the helm of her family’s award winning restaurant “The Mouse and The Bean”, the first true “Antojeria” in Vancouver.    Since then, she founded her catering and events company “Encanto”, bringing the wide diversity of flavours from Mexico to her clients’ tables.   Rossana received the title of “Cultural Promoter” from Mexico’s National Council of Arts and Culture, she has been invited to judge traditional culinary competitions in the state of Michoacán, and has participated in numerous occasions in important culinary events in her city, such as EAT! Vancouver and Taste of the City. She is a regular guest on television shows and has been interviewed on CBC radio, the Vancouver Sun, the Georgia Straight and the Mexican newspaper La Jornada.  She continues offering cooking classes, and every semester goes back to teach at North West Culinary Academy, the only school in the city with an “Introduction to Mexican Gastronomy” class for professional culinary students.
